Telfer MBA Alumni Association’s Foodie Affair

Come enjoy an evening of culinary instruction, dining and wine-tasting with your fellow MBA alumni. The MBA Alumni Association has organized a demonstration cooking class that’s bound to appeal to the foodie in you!
The event features the culinary talent of Chef Dan Carkner. He is the acting Chef de Partie, Saucier and Entremetier at the House of Commons where he has cooked for the Prime Minister, Speaker of the House and foreign dignitaries. He was previously the Sous Chef at the popular Westboro restaurant, Petit Bill’s Bistro. He graduated from the Culinary Institute of Canada at Holland College in Charlottetown in 2011.
Chef Carkner will be cooking the following three courses:
- First Course: Hot-smoked trout on pumpernickel crouton with quick-pickled radish, fennel salad, and labneh
- Second Course: Chicken fricassee with herbed lemon broth, peas, and phyllo crisp
- Third Course: Wine soaked rhubarb with spiced syrup gelee, toasted angel food cake, and pistachio crumble
Guests will enjoy each of these courses with three complementary wines chosen by the resident sommelier. A vegetarian option is available on request.
